Christmas Traditions use white flour

Is Bob's Red Mill Flour just enriched white flour? Although I am eating sprouted bread and avoiding processed foods I would like to enjoy a few of our family's holiday treats which all rely on white flour. Also is there is a whole cane sugar substitute for brown sugar? I am feeling so much better eating the Plan-D way but am concerned about the upcoming holidays getting me off track. I would appreciate your suggestions. Thanks for all your help.

Forum: Questions To Dee

Corn Refiners Association claims HFCS is safe

Imagine the double-take I did when I saw the 'dry cleaning' ad in a family-targeted magazine. The ad boldly claims that HFCS, "like all sugars, should be enjoyed in moderation as part of a balanced diet."

Advertising and marketing specialists are incredibly imaginative and very good with words - but sometimes, they come so close to the line between truth and fiction, what they've said might as well be a lie. This ad is an example of omission of truth; like Dee explained in the Plan-D book, the process of removing sugar from its original plant 'container' not only adds both harmful chemicals to the resulting substance, but also strips away the complimenting components (cellulose and minerals) from the sugar. As Jack Challem wrote for his article printed in The Nutrition Reporter, Fructose: Maybe Not So Natural...and Not So Safe:

Fructose accounts for only 5 to 7.7 percent of the wet weight of cherries, pears, bananas, grapes, and apples. That's about 5.5 to 8 teaspoons per pound of fresh fruit. There's even less fructose - 2 to 3 percent, or roughly 2 to 3 teaspoons per pound - in strawberries, blackberries, blueberries, oranges, and grapefruit.

In other words, there's 9-10 teaspoons (39-44 grams) of HFCS-based sugar in a 12 ounce can of Coke. That's MORE sugar than can be found a pound of fresh fruit!

In many ways, HFCS might be just as good as refined white sugar - that doesn't make either of them good for you.

Being lied to upsets me, and watching others get taken advantage of due to ignorance infuriates me. This ad was targeted at young mothers and fathers, who might be swayed by the surface statement of 'sugar is good for you' enough to make the choice to feed their children products containing HFCS and thus perpetuate the 'need' for processed sweeteners. Stuff like CRA's duplicitous HFCS ads are a breech of ethics so great, it's tantamount to con-artistry.

/soapbox
Forum: Support Circle Forum

Cranberry sauce (just like mom used to make)

I'm a BIG fan of the cranberry. And my mom promoted this love with homemade cranberry sauce, not the over-sweetened HFCS concoction that comes in a can.

Cranberry sauce from scratch is ridiculously simple to make - but 'sugar alternatives' (ie, the broken chlorine and sugar molecules they call sucralose, or the white stuff that kills roaches called aspertame) don't gel the homemade sauce like white sugar does.

So I went hunting for a recipe that looks Plan-D friendly, and here's what I found. (Dee, if you're reading, any recommendations you have to alter this recipe would be great.)

Cranberry Sauce with Agave Nectar

by Amy Andrews (http://www.amysfoodroom.com/2007/11/cranberry-sauce-with-agave-nectar.html)

makes 2 cups

1 12 ounce bag fresh, whole cranberries

2/3 cup agave nectar

1/3 cup orange juice

1 cinnamon stick (2 - 3 inches)

6 black peppercorns

4 whole cloves

3 whole allspice

1. Rinse cranberries and put in medium saucepan. Add agave nectar, orange juice, and cinnamon stick.

2. Place peppercorns, cloves and allspice in a small square of cheesecloth, bundle it up and tie securely with kitchen twine. Trim excess cheesecloth and add bundle to pan of cranberries.

3. Bring cranberry mixture to a boil, reduce heat to a low simmer and cook, stirring often for 15-20 minutes, until cranberries have broken down and mixture is syrupy.

4. Remove and discard cinnamon stick and peppercorn bag. Store cranberry sauce in refrigerator until ready to serve.
Forum: Tasty Recipes

Pregnancy and Plan-D

Hi Dee,

I'm reading Plan-D, and your book has brought these questions to mind that relate to pregnancy nutrition:

If a mother is practicing processed-free eating habits, will she be more sensitive to refined sugar? If so, how might that affect the results of the glucose tolerance test that's often used to diagnose gestational diabetes? Also, can processed-free eating help a mom avoid or 'counteract' a gestational diabetes diagnosis?

Thanks in advance for your thoughts -

- Erinn
Forum: Questions To Dee
