All Natural "Caramel" Popcorn Balls

Normally popcorn balls are a Halloween treat but not anymore!

Ingredients:
1/4 cup nut butter of choice
1/4 cup coconut nectar or raw honey
6 cups air popped or stock pot popped organic popcorn
1/4 – 1/3 cup add ins of your choice (raw nuts, raw seeds, dried fruit, etc)

Directions:

In a small saucepan, heat nut butter and sweetener over low- medium heat, stirring constantly. Once it starts to bubble (not boil – it looks more like little foamy bubbles around the edges of the mixture), continue cooking for 15 seconds, and remove from heat.

In a large bowl, combine the popcorn with the “caramel”, and stir until evenly coated.

Fold in desired add ins.

Fill a bowl with very cold water. Get both hands damp, and take out a handful of popcorn mixture, and squeeze together to form a ball. Don’t be delicate – you want them to stay together! Place on a parchment lined baking sheet, and allow to harden. Wrap each individually in plastic wrap, and store in an air tight container. ENJOY!
