Coconut Bliss Pudding

This is HANDS DOWN the best dessert I have ever tasted! Full of healthy fats and RAW nutrition it is sure to be a HIT in your house! I serve this dairy free pudding in little shot glasses to keep the portion sizes in check and top it with fresh raspberries for garnish =)

1 young coconut — approximately 1 cup each of coconut flesh and coconut water
1 cup raw cashews, soaked overnight
1/2 cup extra virgin coconut oil
1/4 cup coconut nectar 
1-2 vanilla bean pods, or 3 tsp. vanilla extract
1/2-1 tsp. psyllium (to add body to the pudding)
fresh raspberries for garnish
Crack open your coconut and pour the water into a bowl or jug. Keep separate.
Scoop out the coconut flesh and place it in your high powered blender.
Add all other ingredients besides coconut water.
Add about 1/4 cup of the coconut water.
Blend until creamy. If it is very thick, add a little more coconut water.
Pour into a container and place in the fridge. It will set when it has cooled.
Before serving, "beat" the set pudding with a spoon, just to loosen it a little.
Scoop into shot glasses and top with fresh raspberries. Enjoy!
