Dee's Whole Grain Apple Cinnamon Coffee Cake

Makes 1 (8”x8”) pan

Cake Ingredients:

2 large (or 4 small) organic baking apples, peeled, cored and chopped small

1-1/2 cup sprouted spelt flour (can also use unsprouted white whole wheat or whole spelt flour)

1 cup unrefined whole cane sugar, Sucanat or coconut sugar

1/4 teaspoon sea salt

1 teaspoon non-aluminum baking powder

2 teaspoons cinnamon

1 teaspoon vanilla

1/4 cup organic butter, melted

3/4 cup coconut milk

1 large organic egg, beaten

Topping Ingredients:

1/4 cup coconut nectar or raw honey

2 teaspoons cinnamon

1 cup chopped raw walnuts or pecans


Preheat oven to 350 degrees. Coat an 8x8 pan with butter or coconut oil.

In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon. 
In another bowl, mix together the melted butter, egg, vanilla, and coconut milk.

Combine the wet and dry ingredients gently, being careful to not overmix. The batter should be slightly lumpy. Add in the chopped apples.
Combine the nuts, cinnamon and nectar or honey. Spread over the top of the batter. 

Bake for about 35-40 minutes, or until toothpick inserted in center comes out clean. Let cool 10 minutes in the pan. Serve and enjoy!
