Dee or anyone else...

We are totally grain free and so have been on the hunt to find some sort of totally grain free tortilla, either store-bought or homemade.  But, we have been unsuccessful.  There are a ton of non-wheat but still some sort of grain tortillas and you can find rice tortillas but they look sick.  We want to find something or make something that would come close to mimicking a grain based tortilla for things like wraps and tacos.  Some clever person out there must of by now have come up with a grain-free tortilla recipe?  Thanks!

Coconut Flour Tortillas

Ingredients:
 
1/4 cup coconut flour
8 large organic egg whites
1/4 teaspoon aluminum-free baking powder 
1/2 cup filtered water
extra virgin coconut oil
 
Directions:
Whisk coconut flour, egg whites, water, and baking powder together in a large bowl.
Preheat small skillet on medium-high.
Melt 1 teaspoon of coconut oil in the pan and swirl around to coat.
Pour about 3 tablespoons of batter into the pan. Tilt and swirl the skillet to spread out the batter into a round thin tortilla shape.
Cook until golden brown on one side and then flip. (Careful! If you try to flip it too early or too quickly, it will rip. Be gentle and make sure the tortilla is not sticking to the skillet before you flip.)
Cook the other side until golden brown. Remove to plate.
Repeat the steps 3-6. This should make 8-10 tortillas.

There are many recipes online for coconut flour tortillas or paleo tortillas that are grain free. There is also something you can buy called "Pure Wraps" that is a wrap made from coconut (not coconut flour) and Himalayan salt. I've never tried them, but they look amazing. I have tried Pure Wraps and they are AMAZING!! The company is in the process of making more batches of their product since it has been such a hit so they are backordered at this very moment =(
