Homemade Whole Grain Pie Crust:

Here’s a simple recipe for making your own 9-inch pie crust. You can use white whole wheat flour, traditional whole wheat flour, whole spelt flour, or the sprouted versions of these flours. To make two crusts, double all ingredients and divide dough in half.

1 cup Whole Grain flour, regular or sprouted (see pictures of flour options below)
1/2 teaspoon sea salt
1/3 cup coconut oil or unsalted organic butter, chilled
2 tablespoons cold water, plus more as needed
1 teaspoon raw organic unfiltered apple cider vinegar

Method: Combine the flour and salt in a medium bowl; cut in the oil with a pastry cutter or two knives until the mixture is crumbly. Sprinkle with the water and vinegar and blend until the mixture holds together. Add an additional tablespoon of cold water if needed.

Shape the dough into a ball and place on a lightly floured surface. Roll out the dough to 1/8 inch thickness. Coat a 9-inch pie dish with butter or coconut oil. Line the pie dish with the crust. Turn the edges under and crimp as desired. Fill with pie filling and bake according to the recipe.
