Honey Baked Lentils

 

I never ate lentils until I tried this! It's the only way I can get my husband to eat them as well!

 

1 lb. (2 1/3c.) lentils

 

1 small bay leaf

 

5 cups water

 

2 tsp. sea salt

 

Bring all the above ingredients to a boil in a dutch oven. Simmer 20-30 minutes, or until lentils become soft. Do not drain. Discard bay leaf. Preheat oven to 350 degrees.

 

Combine separately and add to lentils:

 

1 tsp dry mustard

1/4 tsp. powdered ginger

1 Tbsp. soy sauce-low sodium

1/2 c. chopped onions

1 c. water

 

Cut 4 slices of bacon (uncured and nitrate free) into 1 inch pieces. Stir most of the bacon into the lentils and then sprinkle remainder on top. Pour 1/3c. raw honey over all the lentils. Cover tightly and bake 1 hr. Uncover ten minutes to brown bacon.  

 

If you are in a hurry, you can fry your bacon first and skip the baking totally and top w/raw honey!

This sounds absolutely delicious!  Thanks for posting it.  The bacon can be replaced with turkey bacon, or for those who are vegetarian, it can be omitted without too much compromise on flavor. Perhaps adding some coconut oil and a little smoky paprika to the recipe instead of bacon will give it that nice flavor
