Indian Red Lentil Dal
Dal is a thick Indian stew with lots of spices and is best served with a fragrant rice or quinoa!
1 tbsp coconut oil
1 large onion, diced
4 garlic cloves, minced
2 tsp turmeric
2 tsp ground cumin
2 tsp paprika
1 tbsp ground ginger
1 cup dried red lentils
4 cups vegetable broth
2 chopped tomato with juices
1 6-oz can tomato paste
1 tbsp ground coriander
2 tsp garam masala
Saute onions and garlic in coconut oil in a medium pot until translucent.
Add turmeric, cumin, paprika, and ginger and coat the onion mixture, cooking a couple minutes.
Add lentils, broth, tomato, tomato paste, and coriander, stirring to combine.
Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes or until lentils are cooked.
Add garam masala, stirring to combine, and let rest 5 minutes
Serve over hot brown basmati rice or quinoa.
