Pronounced "osh," this recipe was given to me by my Iranian co-worker. It's very healthy and can be modified to your liking. The basic idea is to make a soup with greens, legumes, and grains or noodles. Try different spices, legumes, and vegetables to suit your tastes. Quantities may also be changed to your liking. There are versions of this that even have fruits or meats added.

Here's what I did:

2 bunches spinach
1 bunch parsley
1 bunch cilantro
2 bunches scallions
(all these should be washed and chopped)

1/2 cup lentils
1/2 cup split peas
1/2 cup quinoa

spices to taste:
sea salt
dried mint leaves (or fresh)
Bragg's sprinkle

Combine all ingredients in a large stock pot and fill it up with enough water to cover all ingredients. You can use more or less water depending on how soupy you want it. Bring to a boil and then simmer on low heat for 3-4 hours to blend ingredients and flavors.
