Japanese Cucumber Salad
2 cups cucumbers
Sea salt and ground pepper to taste
Slightly less than 1 tbsp. of raw honey or agave
1 tbsp. soy sauce-low sodium
1/8 c. apple cider vinegar (The original recipe called for 1/4 c. rice wine vinegar, but apple cider vinegar has a stronger taste! Add to your taste.)
1 tsp. sesame oil
2 tsp. sesame seeds
1. Peel cucumbers, cut lengthwise and de-seed. Cut into thin moon shape slices. Add salt and pepper and mix well.
2. Add soy sauce, vinegar, honey, and sesame oil.
3. Sprinkle with Sesame seeds and mix.
4. Let marinate 20 minutes before serving.
