We eat more or less a paleo diet. One thing I read in one of my paleo diet books is that actually "legumes" are not good for you for the following reason. This author claims that legumes have what he calls "anitnutrients" that actually interfere with the absorption of good nutrients. He cites such antinutrients in legumes as: lectins, phytic acid and enzyme inhibitors. Dee, what is your opinion about this. So, this is yet another case of a food category either being good for you or bad for you and different experts have different opinions and how can we laymen ever know what the heck to do. Good Morning Mike - Legumes, grains, nuts, and seeds, all contain antinutrients that can interfere with the absorption of nutrients if they are not properly prepared - i.e. soaked or sprouted. Dee wrote an excellent article about this here regarding soaking nuts and seeds, but the same principle applies to legumes and grains. Sprouting or soaking neutralizes the phytic acid, and enhances the absorb-ability of the proteins, vitamins, and minerals. Dee and I talk about this in our podcast here , that it could be that all of these things fall to the ground, there is water around from a recent rain, and this process happens naturally. Soaking and Sprouting has been a practice of traditional cultures for eons and with the advent of convenient foods, this practice has fallen away. But there is a comeback in this regard (with articles like Dee's and the Weston-Price Foundation) re-emphasizing the importance of soaking or sprouting. Hope this answers your question! Dee, if raw nuts contain anti-nutrients, why are they so often recommended as part of a healthy diet? I eat a lot of raw almonds and wonder how it may be affecting my digestion process.

What about cooking beans in a pressure cooker? Do they still need to be soaked first?
