No Fuss Deviled Eggs

A classic made CLEAN!


8 organic eggs
1 medium ripe avocado
1 Tbsp prepared mustard
Sea salt and ground pepper to taste
Hungarian Paprika for garnish (optional)

Add eggs to a medium sized saucepan. Cover with water. Place on the stove and bring to a rolling boil. Cover, remove pan from heat, and let sit for 12 minutes.
Rinse eggs under cool water and peel. Cut in half lengthwise and scoop out the yolk of each egg into a medium sized bowl. 
Place the egg whites on a tray or plate, round side down.
Add the flesh of the avocado, mustard, sea salt and pepper to the egg yolks and mash together with a fork. Make sure that you get a creamy consistency and that all of the lumps are removed.
Scoop mixture into each egg white and top with a couple dashes of paprika. Allow to chill in the fridge for about 30 minutes before serving.
