This is my new favorite dessert and a healthier version of the pineapple whip you can buy at Disneyland or the dole plantation you buy in Hawaii =)
1 ripe pineapple (or 3 to 4 cups of store bought frozen pineapple chunks)
3/4 cup full fat unsweetened canned coconut milk ( I like Natural Value brand)
1 tablespoon coconut nectar or liquid stevia to taste
Peel and cut up the pineapple, making sure to take out all the core. Freeze overnight. If you don’t have time, you can use store-bought frozen pineapple chunks.
Blend coconut milk to break up any solid pieces that may have formed in the can and to thin the consistency of the milk out. Set blended coconut milk aside and clean out blender.
Place all ingredients in a high-powered blender or food processor (a Vitamix or Blendtec works best). Blend until creamy. If needed, add more milk to get your blades spinning smoothly.
Divide among 4 bowls and serve immediately. Top with fresh blueberries if desired.
Note: To change this tropical dessert up a bit replace 1-2 cups of the frozen pineapple chunks with frozen mango, papaya or frozen banana chunks =)
