This recipe is from a cookbook I recently purchased, called The Happy Herbivore. It has some delicious recipes. I've changed some of them a bit to fit Plan-D more appropriately. Enjoy!

Ingredients:
1 medium onion (I use a large red onion), finely chopped
1 tsp ground coriander
1 tsp chili powder
1 tsp ground cumin
1/2 tsp turmeric
1/8 tsp ground ginger
1 8-oz can tomato sauce (I use tomato paste and water it down)
1 c canned or cooked kidney beans
salt, to taste
1 tsp garam masala
fresh cilantro, chopped (for garnishing)
1 to 2 cups cooked brown rice


1.) Line a medium saucepan with a thin layer of water and cook onion over medium heat for 5 minutes
2.) Add coriander, chili powder, cumin, turmeric, and ginger, stirring to combine.
3.) Continue to cook until almost all of the water has cooked off.
4.) Add tomato sauce, kidney beans, and salt.
5.) Lower heat to low-medium and cook until thoroughly warm.
6.) Turn off heat, stir in garam masala, and let rest for 5 minutes, allowing the flavors to merge. 
7.) Serve over rice and garnish with chopped fresh cilantro.

It's great! Also, if you want to add a kick to it, I add peppers/green chilies to it. The original recipe is a good way to get in legumes, whole grains, fat burning spices, and a rainbow vegetable portion.
