Skinny Cowboy Caviar

This makes a GREAT potluck dish or served as a snack or meal!
3 cans black eye peas, drained and rinsed.
2 cans organic shoepeg corn, drained
3-4 Roma tomatoes, chopped
3 avocados, chunked
1 bunch of cilantro, chopped
1/2 sweet onion, minced
Juice of two limes
1/2 - 1 cup sweet skinny apple cider vinaigrette (SOS page 343)
Sea salt to taste
Combine all ingredients in large bowl and stir gently. You can make this recipe ahead of time and refrigerate. Add avocado last to prevent browning. Serve with healthy tortilla chips or rolled in a lettuce leaf as a wrap or over a bed of greens as a salad. Enjoy. It is addicting.
