What kind of sugar is best for baking and cooking?  Can I use Stevia in my cookies or muffins?

If you use stevia, you have to experiment with you recipe.  Stevia won't add the volume to your recipe that sugar does.  My cookbook has a section on how much stevia to use in place of sugar.

Another option would be to use either Rapadura sugar or Xylitol.  Both can replace white sugar cup for cup.
