I make this smoothie for two people, and we usually have enough for both of us to have a 16-20 ounce serving for breakfast plus a little more leftover that we have for a snack later in the day.
It makes a full Vitamix pitcher (about 8 cups). If you are only one person, you can cut the recipe in half, however you can always make the full recipe and save any leftover to consume the next morning. It is best to add only half of the avocado seed per 32 ounces of smoothie; then it doesn’t affect the taste of smoothie but makes it a little thicker.
- 1 cup lite coconut milk
- 2 cups water
- 1 scoop vanilla whey protein concentrate (or other protein powder)
- 2 bananas
- 2 tablespoons raw cacao nibs
- 1 avocado pit (crushed into small pieces)
- 1 large heart of Romaine lettuce, chopped (about 4 cups)
- Large handful of fresh curly parsley
- 1/2 avocado
- 2 cups assorted fresh or frozen fruit (strawberries, mango, pear, pineapple, green figs, blueberries, etc.)
Step 1: Crack the Avocado Seed:
The avocado seed can be dried and then crushed, or it sometimes helps to soak the seed in water overnight and then rinse and dry it before crushing it. To crush it, place the seed in a plastic bag or wrap it in a clean kitchen towel to be able to hold it in place on a cutting board. While holding it in place, whack it with a hammer or the flat side of a meat mallet, then pound it to continue crushing it into smaller pieces.
Add the crushed pieces to your smoothie ingredients a heavy duty blender (use only 1/2 the seed… and remember they are too hard for most blenders) and grind it up into a powder. And Avocado Seed can be sliced and roast in the oven too! Remember Avocado Seed is slightly bitter so make sure to add it to smoothies and sauces that cover up the bitterness.
Step 2: Place coconut milk, water, protein powder, bananas, cacao nibs, crushed avocado seed and lettuce into your high powered blender. (You must use a high powered blender such as a Vitamix, Blendtech, or Ninja, as avocado seeds are too hard for most regular blenders.)
Ramp up the speed to high and blend on high until all ingredients are completely blended and there are no large chunks of avocado seed, cacao nibs or lettuce.
Stop the blender, add in the 2 cups of fresh or frozen fruit, and ramp up again to blend on high until all ingredients are smooth and creamy. If not using frozen fruit, you may want to add some ice cubes to chill the smoothie.
Step 3: Drink immediately or store in the refrigerator in glass containers with tight fitting lids to enjoy later. Refrigerate for up to 2 days, but the fresher the better.
Blended this tastes like a rich, creamy, slightly sweet smoothie and it’s really filling. The fruits mask the bitter flavor of the avocado seed, so you don’t even taste it but you still get all the avocado seed health benefits!
