I posted this recipe before, but I think in the wrong place. It's worth reposting, as it is so good!

Sweet Potato and Coconut Quinoa Soup

2 large sweet potatoes
2Tbsp coconut oil
1/2 C quinoa
3 cups veggie stock
1 C coconut milk
1/4 t cayenne pepper
1/4 t chili powder
Greek Yogurt (recipe says optional, I say not optional)


Wash and peel potatoes. Cut into 2-3 inch chunks. Boil for 5-6 minutes, until soft but not mushy.
Place oil in stockpot over medium heat and cook oinions until soft. Stir in veggie stock and quinoa and bring to a boil. Reduce heat to med. and cook about 15 min., until quinoa is cooked.
Add sweet potatoes and enough of the liquid to create the texture you prefer. Puree' with a hand blender or in 2 batches in a blender. Return to low heat and stir in coconut milk, adding the cayenne and chili powder. Ladle into bowls and top each serving with a spoonful of yogurt.

there's one ingredient missing - 1 cup of diced onion
