Touchdown Turkey Chili & Beans


1 pound hormone-free, lean ground turkey
1 red onion, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 cup chopped carrots
5 cloves fresh garlic, minced 
1 can ( 15 ounce) diced tomatoes , including liquid
1 can ( 8 ounce) reduced sodium tomato sauce
1 can (6 ounce) tomato paste
2 cups water
3 tablespoons chili powder
1 teaspoon dried mexican oregano
2 teaspoons ground cumin
2 cans (15 ounce) pinto beans, rinsed and drained
1 can (15 ounce) red kidney beans, rinsed and drained

Place ground turkey, onion, and garlic in a large stockpot and cook over medium heat until turkey is cooked through. Add carrots, bell peppers, diced tomatoes, tomato paste, tomato sauce and water. Increase heat to medium high until the mixture starts to boil. Add chili powder, mexican oregano, cumin and beans. Reduce heat to medium and simmer for 30-45 minutes, stirring occasionally. Serve chili with sliced avocado on top and a fresh spring mix salad. Enjoy!
