I'm hearing that wheat is bad for us and I understand why, but my question is does this include organic wheat?  I use Ezekiel Sprouted Grain bread and I need to know if this is also bad for us ddto eat.

I took a stand on wheat in my book The Science of Skinny.  I said that as a nation, we eat way too much wheat and it should be drastically reduced in everyone's diet.  I don't believe wheat should be eaten every day, and if you do eat it, it is best eaten in the sprouted form. I personally believe that as much as possible, modern wheat should be avoided.  Instead, if we do eat wheat, we should be eating the ancient varieties of wheat such as spelt, kamut, and einkorn.

If you believe William Davis, MD, author of the book Wheat Belly, all wheat is bad for you, whether it comes in the form of organic, whole grain, sprouted, or refined white flour.  Davis is credited with bringing the information about wheat into the national spotlight. He calls modern wheat “Frankenwheat” because it has undergone dramatic changes from the real wheat eaten by people just a little more than 40 years ago.  Today's wheat has been hybridized and altered at the genetic level to produce a type of wheat that makes fluffy breads but does not agree with our human DNA.  According to Dr. Davis, “this thing being sold to us called wheat—it ain’t wheat. It’s a distant relative of the wheat our mothers used to bake muffins, genetically and biochemically light-years removed from the wheat of just 40 years ago.”  Because of these changes, scientists are starting to connect modern wheat with all manner of chronic digestive and inflammatory illnesses. 
The Ezekiel brand makes bread by adhering to the advice provided in the Bible in Ezekiel 4:9:  “Take unto thee Wheat, and Barley, and beans, and lentils, and millet, and Spelt, and put them in one vessel, and make bread of it…”  But sprouted wheat is still wheat. And it’s not the wheat of the days of the Bible, it's modern wheat, even if it is grown organically and then sprouted.  

So, if you adhere to what Dr. Davis says, then yes, the wheat in Ezekiel bread is also bad.  However, this is something only you can decide for yourself based on what you believe and your own experience.  Some people have claimed that giving up wheat, including sprouted wheat, was the key to their improved health. Others say giving it up made no difference one way or the other in their health.

If the news about wheat alarms you, the simple and obvious solution is “don’t eat wheat”.  But there is an alternative solution: don’t eat foods made with modern wheat.  Instead opt for spelt, kamut or einkorn.

There is a bakery called Berlin Bakery, that makes an organic Ezekiel type sprouted bread without the wheat.  It's called Sprouted Biblical Bread.  You can read the ingredients and order from their website, or perhaps your local natural food market will order it for you.  They also carry a sprouted spelt bread and other types of organic ancient grains breads.
