Whole Wheat Greek Yogurt Pancakes




2 cups whole wheat pastry flour
2 teaspoons aluminum-free baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon sea salt
2 1/2 cups light (canned) coconut milk
6-ounce container plain, nonfat organic Greek yogurt
1 tablespoon vanilla extract
1 1/2 tablespoons coconut nectar or raw honey

extra virgin coconut oil for greasing




In a large bowl, whisk flour, baking powder, sea salt and cinnamon. Add coconut milk, yogurt, vanilla extract and coconut nectar, whisking until smooth.Grease a griddle or skillet with coconut oil over medium heat. Using a 1/4 cup measure, pour batter into rounds. Let cook until bubbles appear on the surface, about 3-4 minutes, then flip and cook for an additional 1-2 minutes.  Top with fresh fruit and coconut nectar or organic maple syrup.
